Sweet potato & leek soup

2 Leeks cleaned & chopped
1 Small onion
2 tbsp olive oil
2 Sweet potatoes peeled & chopped
1 Can pumpkin
2 Cloves garlic chopped
1 Quart vegetable broth & 1 cup water
2 Bay leaves
1 tbsp sage
1 tbsp each cinnamon, cloves & ginger
Salt & pepper to taste


Saute onions & leeks in olive oil in a big soup pot. Add rest of ingredients & cook till potatoes are tender. Then remove bay leaves & puree soup in blender.

  2. Hey girls!!! Sorry I went AWOL there for a while. I came down with a yucky cold virus which was bad enough until my computer came down with one too and that was worse! Yeah, my priorities might be just a little off. I couldn't get anyone to see to it until after the holidays. Gosh I've missed ya'll.

    So... I tried this and LOVED it! I'm going to take a picture and put it on my blog. So, so, so good. Thanks for putting it up Andrea. It really hit the spot during this very cold snap we're having here in Kentucky. brrrrrr!

    How did the leek pastries turn out? I'm really anxious to find out.

    Btw, the chili was also oh-so-good. You're right no one even reason that it was meat-less. Bam! Score one for the veggie girls. :)

  3. Oh I meant... no one even "realized" it was meat-less. Although it was so good they probably all lost the ability to reason as well...

    Still... boo-freaking-yah! to the veggie girls! The whole family loved it. We take turns cooking during the holidays when we're all gathered together at my parents. I fixed the chili on my night and the masses cheered. :)
